Rub/Marinade – great on poultry

5 spice brown sugar salt and pepper

10g five spice
12g brown sugar
5 g salt
8 g pepper
100ml oil Mix


Whip Salt and pepper lemon juice parsley and butter together

Cafe de Paris butter with steak
Whip together
200g butter, at room temperature
1 garlic clove, crushed
2 drained anchovy fillets, finely chopped
2 teaspoons Dijon mustard
1 teaspoon baby capers, rinsed, drained
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh continental parsley

Pepper rub steak/marinade

10g each of red black white green &
5g Szechuan
5g granulated garlic
10g salt
10g sugar
