Wonderful for making sausage rolls as well.Add to basketWith a Middle Eastern tone this mix is so easy to use, it’s ridiculous. Just add the mix with meat and water. Sultan, a Saudi Student who was staying with me, was delighted. As he tasted the skinless sausage I had prepared only 30 minutes earlier, his face lite up with a smile from ear to ear, “Now this tastes familiar” he said “I am happy. It tastes like home.” Mince becomes delicious whether you use lamb, beef, pork, even a mix of all, works really well. Experiment with it! I have made it into skinless sausages, cased sausages, meatloaf and it transforms the humble rissole. The results are moreish, subtle and aromatic sausages. Great with a dolop of yoghurt mixed with sumac or you could just as easily serve with Mash and peas. -

Dry rub/marinade, wet marinade, spiced butter, tandoori style marinade, see recipes for more!Add to basketThere is a little kick in this dish but a lovely complex mix of spices. It gives a level of sophistication to everything it is used on, whether it be an expensive backstrap or a lamb grilling chop. I absolutely love this recipe which has developed over time. If you add lemon juice and a little olive oil it turns into a marinade, which is great for chicken or any other meat. Writing about it my mouth is watering — as I imagine it with some Cous Cous a big green salad and some yoghurt. It isn’t too spicey. Steven, a heat-sensitive friend of mine, was worried that it was going to be too hot but he says, “it’s definitely not too spicey and is perfectly balanced to compliment a nice piece of lamb.” -

$7.50This is a spice which is pretty hot and very aromatic -Add to basketit was designed for a duck producer. It can be used a a dry rub or alternatively mixed with oil and lemon as a marinade. It is also amazing in a plum sauce & orange sauce. I use it on duck, chicken and also on pork. Always cook at low to medium heat as burnt spices are bitter spices
