With a Middle Eastern tone this mix is so easy to use, it’s ridiculous. Just add the mix with meat and water. Sultan, a Saudi Student who was staying with me, was delighted. As he tasted the skinless sausage I had prepared only 30 minutes earlier, his face lite up with a smile from ear to ear,

“Now this tastes familiar” he said “I am happy. It tastes like home.”

Mince becomes delicious whether you use lamb, beef, pork, even a mix of all, works really well. Experiment with it! I have made it into skinless sausages, cased sausages, meatloaf and it transforms the humble rissole. The results are moreish, subtle and aromatic sausages. Great with a dolop of yoghurt mixed with sumac or you could just as easily serve with Mash and peas.

Fijian Coconut Curry is slightly lighter sweeter with Turmeric coriander coconut cumin etc so yum just add the meat and some stock or if your’e using meat on the bone just add water. I throw in some vegetables and make some roti and its just my fave.

NEW!!! Mexican mix is great just add meat beans or whatever your choice  @ 10%   proportionate to the weight you are using. Great for all Mexican dishes.  Its got a bite but my goodness its good.

African Spice – the most versatile. See recipe section endless possibilities. Its spicy but you can reduce the spicyness by making a tandoori style with yoghurt. Great as a dry rub or wet marinade. I also make lavash bread with it. Put a pinch in salad dressing to add another layer with lemon juice & oil and a teaspoon of sugar. RECIPE SECTION HERE
